Vanilla Promix Sponge


Vanilla promix sponge is a convenience premix designed to yield high volume, economical sponge cake.


INGREDIENTS:


Cake flour, sugar, skimmed milk powder,
glucose syrup solids, corn starch
emulsifiers, sodium phosphate, sodium
acid pyrophosphate, sodium bicarbonate,
tri calcium phosphate contains major
food allergens (wheat,milk).


STANDARD RECIPE:
VANILLA PROMIX SPONGE 1000G
WHOLE EGGS 750G
WATER 200G

PROCESS:

  1. Add eggs and water (stir for 30 seconds to homogenize).
  2. Add the sponge powder to the bowl and mix for 1 minute on slow speed (WIRE TOOL, PLANETARY MIXER).
  3. Continue mixing for 7 minutes on high speed.
  4. Deposit and bake for 30 minutes at 180°c (convection oven) if a (deck oven) bake at 200°c for 30 minutes.
  5. Processing directions are issued as a guide.
  6. Baking performance may vary depend on the type of oven, deposit weights, ETC…
